Baked Greenland Cod
Baked Greenland cod is like taking a little piece of France hidden at the edges of Brittany coasts! The fresh fish, cooked to perfection in a hot and warm oven, transports you directly to the beach where the salt and waves inspired this unforgettable recipe. That’s why this absolutely delicious dish has managed to carve out a place of honor in French cuisines.
🥘 Ingredients
- 4 slices of Greenland cod
- 2 chopped onions
- 6 potatoes
- 2 tomatoes
- 1 small glass of oil
- A bunch of crushed coriander
- The juice of 2 lemons
- 2 crushed garlic cloves
- 2 tablespoons of mild pepper
- 1 pinch of hot pepper,
- 1/2 teaspoon of cumin
- Salt, pepper,
👨🍳 Instructions
- In a bowl, mix the crushed coriander with lemon juice, mild pepper, cumin, hot pepper, salt, crushed garlic cloves and stir well to obtain a beautiful aromatic sauce.
- Peel the onions and finely chop them. In a pan, add hot oil then sauté the onions carefully until they are well cooked without burning.
- Peel the potatoes and cut them into rounds, then cook them steamed for about 20 minutes until they are tender.
- Seed the tomatoes and cut them into small pieces.
- Place the slices of Greenland cod in a baking dish, add the prepared aromatic sauce, oil, stir well with two glasses of water and bake at 200°C for about 20 minutes.
- Serve the slices of Greenland cod, cover with sauce and surround with steamed potato rounds.
- Serve the dish hot.
