Chocolate Black Cake

🥘 Ingredients
- 6 eggs
- 150g butter
- 180g powdered sugar
- 150g black chocolate
- 160g flour
- 100g almond powder
- A pinch of salt
- Garnish
- 2 tablespoons apricot jam
- 30g crushed almonds
👨🍳 Instructions
- Melt the black chocolate over a double boiler, ensuring it does not burn.
- Whip the egg whites into stiff peaks using an electric beater.
- Mix butter and powdered sugar in an electric mixer until creamy. Add the egg yolks and salt, mix well. Add the melted chocolate to the mixture.
- Gently fold in the whipped egg whites to the mixture using a wooden spoon. Add the sifted flour and almond powder, mix well.
- Butter and flour a springform pan and pour in the mixture.
- Bake in a preheated oven at 180°C for approximately 30 minutes, or until the chocolate cream is cooked.
- Check the cake’s doneness with a knife, before removing it from the oven. If the knife comes out dry, the cake is cooked.
- Unmold and let the cake cool on a wire rack. Glaze it with apricot jam and sprinkle it with crushed almonds.
- Serve the cake in a dish.
