Dry Raisin Cake

🥘 Ingredients
- 300g of flour
- 150g of butter
- 150g of powdered sugar
- 5 eggs
- 1 lemon zest
- 1/2 cup of orange juice
- 50g of dry apricots
- 3 packets of baking powder
👨🍳 Instructions
- Put the dry apricots in a saucepan, add the orange juice and lemon zest. Cook on low heat until the apricots are soft.
- In a bowl, put the powdered sugar and softened butter cut into small pieces. Work them together with an electric mixer until the mixture becomes creamy.
- Add the eggs one at a time, making sure the first is well absorbed before adding the next. Then add the apricot mixture, lemon juice, and lemon zest.
- Gradually incorporate the sifted flour, then add the baking powder.
- Pour the mixture into a greased and floured cake pan.
- Bake in a moderately hot oven for 45 minutes.
