In traditional Tunisian cuisines, Chebakia or zlabia are a dessert that reveal the love for sweet flavors and delicate textures. Originating from the region of Tunis, these small delights are made from a light, crispy dough, covered in a sublime mixture of honey and orange blossom. A meticulous preparation, but worth the interest, as the result is simply delicious.

🥘 Ingredients

  • 250g of durum wheat flour
  • 250g of fine flour
  • 1 teaspoon of salt
  • 20g of baker’s yeast
  • 2kg of honey
  • 2 tablespoons of orange blossom water
  • Oil for frying
  • Warm water

👨‍🍳 Instructions

  1. In a mixing bowl, add the sifted flour and create a well. Add the dissolved yeast in warm water, salt, mix the sifted flour with warm water until you obtain a homogeneous dough. Knead strongly for 20 minutes, add water little by little while aerating the dough and beat vigorously by hand on the mixing bowl, continue adding water until you obtain a liquid dough, let the dough rest for 3 hours.
  2. In a saucepan, heat the honey until boiling, add two tablespoons of orange blossom water.
  3. Heat oil in a pan, fill the pastry bag with the liquid dough and try to draw a flower on the hot oil.
  4. Fry the zlabia from both sides in hot oil, then remove them and immerse them immediately in the hot honey, continue the operation until the exhaustion of the dough.
  5. Store them in a well-sealed box.
