Here is a recipe that takes us to distant regions, without leaving France! The peasants of Périgord have created a biscuit made with red cheese that is absolutely delicious, which goes perfectly with tea or coffee. And it is so simple to prepare that you will have no excuse not to make it!

🥘 Ingredients

  • 250g flour
  • 150g butter
  • A pinch of salt
  • 15cl milk
  • 270g red cheese
  • 1 packet baking powder

👨‍🍳 Instructions

  1. Mix together 250g flour, 150g softened butter, a pinch of salt and 15cl milk in a bowl.
  2. Add 270g red cheese cut into pieces and 1 tablespoon of baking powder to this mixture. Knead gently until the dough becomes homogeneous.
  3. Let the dough rest for an hour.
  4. Spread flour on your work surface and cut the rested dough into pieces. Roll out each piece with a rolling pin until they are 5mm thick.
  5. Prick each small cake with a fork and cut them into rectangles using a cookie cutter.
  6. Place the biscuits on a greased and floured baking sheet, leaving some space between them.
  7. Dip a paintbrush in salted milk and regularly brush the biscuits with it before putting them in the oven for 5 minutes at medium heat.
