Hard-Boiled Egg Biscuits
Originating from the Lombard region, we will initiate you into one of Italy’s most guarded pastry secrets: hard-boiled egg biscuits. This recipe stirs the hearts of gourmands with a subtle blend between melted butter, yeast, flour, and those famous hard-boiled eggs, which come together to offer an unforgettable taste.
🥘 Ingredients
- 3 eggs
- 125g melted butter
- 1/2 cup of oil
- 3/4 cup of powdered sugar
- 1/2 packet of baking powder
- Flour according to the mix
👨🍳 Instructions
- Cook the 3 eggs in a boiling water pot for 10 minutes, then remove them and let them cool under running water. Afterwards, peel them, halve them, and separate the whites. Create a puree from the yolks of eggs with a fork and set aside.
- In a mixing bowl, mix melted butter with powdered sugar until you get a uniform consistency. Then add oil, mix well, then incorporate egg yolk puree and baking powder. Continue to work the dough with your hands to achieve a soft texture.
- Gradually add sifted flour into the dough and continue to knead until the dough is completely homogeneous.
- Roll out the dough on a floured surface with a rolling pin about 3 mm thick, cut hearts using a cookie cutter, and place them on a baking sheet lined with parchment paper.
- Bake the biscuits in an oven preheated to 180°C until they turn a light brown-pink color.
