🥘 Ingredients
- 1kg of veal tenderloin
- 1 cube of chicken bouillon
- 1 carrot
- bunch of fresh herbs (bouquet garni)
- beef broth (le bouillon de veau)
- 2 large onions
- 250g of Paris mushrooms
- pot of sour cream (crème fraîche)
- lemon juice (le jus de citron)
- 2 egg yolks
- 1 tablespoon of flour (cuillerée à soupe de farine)
- 60g of butter
- peppercorns (grains de poivre)
- salt to taste (sel)
👨🍳 Instructions
- Peel the onions carefully and cut them into pieces.
- Carefully peel the mushrooms and cut them into small pieces.
- Cut the veal tenderloin into equal pieces, brown them in a casserole with half of the butter until they are slightly golden. Add then 1 liter of beef broth and bring to a simmer.
- Then add the carrot, onion, chicken bouillon cube, the bunch of fresh herbs, peppercorns, salt to taste, cover and cook for 45 minutes over low heat.
- Add the mushrooms then and continue cooking for 20 more minutes.
- In a bowl, mix well the sour cream, egg yolks and lemon juice.
- Put the rest of the butter and flour in a saucepan and stir with the beef broth. Cook over low heat for 10 minutes while constantly stirring, then off the heat incorporate the cream mixture.
- Stir well until a thick sauce is obtained. Pour this sauce into the casserole with the meat and cook for a few more minutes, remove the bunch of fresh herbs afterwards.
- Serve immediately.
