Here is a recipe that takes you to the heart of North Africa! The Briouats aux cacahuètes, a delight from Tunisia, are small cakes wrapped in authenticity and flavor. Indulge yourself by preparing these ball-shaped pastries filled with peanut and sesame paste, enveloped in pastilla leaves for an unparalleled result.
🥘 Ingredients
- 700g peanuts
- 300g sesame seeds
- 3 teacups of powdered sugar
- 1/4 teaspoon ground gum arabic
- 1/2 teacup orange flower water
- 1/2 teaspoon ground cinnamon
- 2 tablespoons butter
- 2kg honey
- 1kg pastilla leaves
- 1 egg yolk
- Oil for frying
👨🍳 Instructions
- Roast the peanuts in a pan until they are well golden, then remove them from the pan and rub them to remove the skin.
- Roast the sesame seeds in a pan.
- Put the roasted peanuts, roasted sesame seeds, and powdered sugar in a grinder until smooth, add the ground gum arabic, cinnamon, orange flower water, melted butter and knead them together to obtain a thick paste.
- Take small balls from this paste, about cherry size.
- Cut the pastilla leaves into a rectangle shape of 7cm x 20cm.
- Place the cut leaf on the table, put the peanut ball at one end and fold or roll to form a triangle, stick the ends with the egg yolk ensuring to enclose the filling, continue this way until all the filling is used up.
- Fry the briouats in a large pan filled with hot oil and dip them hot into honey, drain.
- Serve cold.
