🥘 Ingredients

  • 500g of hazelnuts
  • 130g of dark chocolate to bind the mixture
  • Garniture
  • 250g of dark chocolate
  • Powdered sugar

👨‍🍳 Instructions

  1. Preheat your oven to 180°C (thermostat 6). Spread the hazelnuts on a baking sheet and bake for about 7 minutes, or until the skin is golden brown. Remove from the oven and rub the hazelnuts between your hands to remove the skin. Grind them in an electric grinder until you have a fine paste.
  2. Break up the dark chocolate into pieces and place it over a saucepan containing water. Melt the chocolate using a double boiler, such as at low heat. Add 2 tablespoons of oil to make the chocolate smoother.
  3. Place the ground hazelnuts in a bowl and add the melted chocolate. Mix well until you have a uniform paste.
  4. Shape the hazelnut paste into rolls and place them in the refrigerator to firm up slightly.
  5. Using a paintbrush, coat the top of each roll with melted dark chocolate. Draw grooves on the rolls using a fork and dust them with powdered sugar using a fine sieve.
  6. Use a sharp knife to cut delicate 4cm long pieces from each roll. Place them in pastry cases.
  7. Arrange them on a plate and serve the hazelnut yule log immediately, as the powdered sugar may melt.
