Push open the door to an authentic culinary experience! In southern Tunisia, Baghrirs are a traditional sweetness that tickles the taste buds and comforts the stomach. These delicious crispy pancakes, served with a butter zest and liquid gold, will make you bite the dust for another dose!

🥘 Ingredients

  • 2 glasses of fine semolina
  • 2 glasses of fine flour
  • 2 eggs
  • 2 packets of baking powder
  • 1 tablespoon of active dry yeast
  • 4 glasses of water
  • 1/2 teaspoon of salt

👨‍🍳 Instructions

  1. Begin by placing in an electric mixer the tamisied fine semolina, as well as the tamisied fine flour, diluted active dry yeast in a bit of warm water, baking powder, eggs, salt, water and mix until you obtain a homogeneous dough (make sure to cook immediately without letting it rise).
  2. Preheat a terra cotta pan and clean it with a cloth dipped in egg yolk. Pour a ladle of batter onto the pan and cook over medium heat until holes appear on the surface, cook them from one side only, continue this process until the batter is used up.
  3. Arrange the baghrirs on a serving plate and serve with butter and melted honey.
