- Clean the apricots carefully, remove the pits and chop them into small pieces, then blend until smooth to obtain a smooth cream.
- Pour the orange juice into a bowl, sprinkle with gelatin and heat the bowl in a double boiler until the gelatin dissolves, then add this preparation to the apricot cream, let it cool.
- Whip the thick cream well with a whisk until it is firm and pour it into the previous cream.
- Pour the obtained apricot cream into lightly oiled molds, refrigerate until set.
