Hard-Boiled Egg Biscuits
At the heart of Yorkshire, where culinary traditions are so rich and varied, it is hard to resist the charm of these hard-boiled egg biscuits. These delicious little treats, known as Egg Biscuits or Hard-Boiled Egg Cookies, are a family recipe that transports us directly into the rural English landscapes.
🥘 Ingredients
- 3 eggs
- 125g melted butter
- 1/2 cup oil
- 3/4 cup powdered sugar
- 1/2 packet baking powder
- Flour as needed, sifted
👨🍳 Instructions
- Cook the eggs in a saucepan filled with boiling water for 10 minutes. Remove immediately afterwards.
- Quickly cool the eggs by running them under cold water from the tap, then peel and halve them. Separate the yolks from the whites and mash the yolks with a fork.
- Mix melted butter and powdered sugar in a bowl, working the mixture until it has a smooth consistency. Add oil, mashed egg yolks, baking powder, and continue to work with your hands to incorporate all ingredients. Gradually knead sifted flour to form a soft and homogeneous dough.
- Roll out the dough on a floured work surface using a rolling pin, to a thickness of 3mm. Use a cookie cutter to cut hearts from the dough. Place the hearts onto a baking sheet lined with parchment paper.
- Preheat your oven to 180°C and bake the biscuits until they turn a light pink color.
