  • 200g flour
  • 1 tea cup milk (tea cup = 250ml)
  • 200cl cream (cl = 100ml)
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon lemon zest
  • A pinch of salt
  • 150g cottage cheese
  • 1 tea cup pastry cream
  • 8 chopped pickles
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped parsley
  • Salt, pepper
  • Garnish
  • Smoked trout fillets
  • Few green olives
  • 1 peeled and diced tomato

👨‍🍳 Instructions

  1. Begin by mixing in a sifted bowl the flour, baking powder, lemon zest, milk, cream, egg, and salt. Stir until smooth and soft, then reserve in the refrigerator for 20 minutes.
  2. Heat an oiled pan over low heat. Spoon 2 tablespoons of batter into the pan and cook each side of the blinis, repeating the process until all batter is used up.
  3. Using an electric whisk, mix the cottage cheese, cream, chopped pickles, lemon juice, chopped parsley, salt, and pepper together until smooth and savory.
  4. Spread the mixture on the blinis from your preparation, garnish with smoked trout, olives, and diced tomato.
