🥘 Ingredients

  • 6 eggs
  • 150g butter
  • 180g powdered sugar
  • 150g black chocolate
  • 160g flour
  • 100g almond powder
  • A pinch of salt
  • Garnish
  • 2 tablespoons apricot jam
  • 30g crushed almonds

👨‍🍳 Instructions

  1. Melt the black chocolate over a double boiler, ensuring it does not burn.
  2. Whip the egg whites into stiff peaks using an electric beater.
  3. Mix butter and powdered sugar in an electric mixer until creamy. Add the egg yolks and salt, mix well. Add the melted chocolate to the mixture.
  4. Gently fold in the whipped egg whites to the mixture using a wooden spoon. Add the sifted flour and almond powder, mix well.
  5. Butter and flour a springform pan and pour in the mixture.
  6. Bake in a preheated oven at 180°C for approximately 30 minutes, or until the chocolate cream is cooked.
  7. Check the cake’s doneness with a knife, before removing it from the oven. If the knife comes out dry, the cake is cooked.
  8. Unmold and let the cake cool on a wire rack. Glaze it with apricot jam and sprinkle it with crushed almonds.
