Roasted Stuffed Duck

🥘 Ingredients
- 1 duck
- 4 garlic cloves
- Juice of 1 lemon
- 1 chopped onion
- Salted butter
- 1 small handful of parsley and coriander chopped
- 1 cup of long grain rice
- 100g of chicken giblets
- 1 teaspoon of ginger
- 1/2 teaspoon of black pepper
- A pinch of saffron
- Salt
👨🍳 Instructions
- Thoroughly wash and salt the duck inside and out, then place it in the freezer for at least two days.
- Place the rice in a saucepan of salted water, bring to a boil and cook for ten minutes.
- Put the lemon juice, chopped parsley and coriander, chopped garlic, ginger, black pepper, saffron, a teaspoon of salted butter, and a tablespoon of the mixture reserved for stuffing, mix well, reserve a bit of the mixture for stuffing, coat the duck inside and out with the mixture and let it marinate for twenty minutes.
- Place the cooked rice, chopped onion, reserved mixture, chopped chicken giblets, a teaspoon of salted butter, salt, mix well in a bowl.
- Stuff the duck with this preparation, tie the opening with kitchen twine.
- Fill the couscoussiere pot with three liters of water and bring to a boil, then place the stuffed duck in the top of the couscoussiere, cover it well with sulphurized paper and let it cook for two hours in steam.
- Place the cooked duck in a baking dish and coat it well with salted butter, then brown it on all sides in a moderately hot oven.
- Serve immediately.
