This sublime Alsatian sauerkraut is a classic, which pairs wonderfully with Strasbourg sausages, potatoes, and a delicate subtly flavored chicken broth. 🥘 Ingredients
- 1kg of raw sauerkraut
- 500g of smoked bacon slices
- 5 potatoes
- 25cl of chicken broth
- 10 Strasbourg sausages
- 2 chopped onions
- 2 crushed garlic cloves
- 80g of butter
- 2 tablespoons of goose fat
- 1 bouquet garni (thyme, laurel)
- Salt, pepper
👨🍳 Instructions
- Start by cleaning and peeling the potatoes.
- Rinse the sauerkraut well and drain it.
- In a large skillet, sauté the chopped onions and crushed garlic in butter and goose fat. Add the bouquet garni, salt, pepper, and moisten with chicken broth. Incorporate the sauerkraut and simmer covered over low heat for 1 hour 30 minutes. Add the bacon next, and continue cooking before adding the sausages. Add the potatoes and cook until all ingredients are properly cooked.
- In a serving dish, arrange the sauerkraut and place the sausages cut into large pieces, the bacon, and the potatoes on top.
- Serve hot.
