🥘 Ingredients

  • The Filling
  • 500g of almond powder
  • 300g of powdered sugar
  • 2 egg whites
  • 3 tablespoons of orange flower water
  • 1/2 teaspoon of ground cinnamon
  • Some powdered gum arabic
  • The Dough
  • 125g of butter
  • 2 tablespoons of powdered sugar
  • 200g of cream
  • 1 tea cup of orange flower water
  • Flour according to the mix
  • Red powdered food coloring
  • Silver dragees for decoration

👨‍🍳 Instructions

  1. The Filling
  2. Prepare the filling by mixing the almond powder, powdered sugar, egg whites, orange flower water, cinnamon, gum arabic, and mix well until a homogeneous paste is obtained.
  3. Form balls with this paste in olive shape.
  4. The Dough
  5. Cream the butter and powdered sugar in an electric mixer until a creamy mixture is obtained, add the cream, mix well, add the orange flower water, add the sifted flour little by little, knead well until the dough has the consistency of bread dough, knead strongly with the palms of your hands for 20 minutes until a soft dough is obtained.
  6. Form balls from this dough the size of an orange, add the red food coloring to one of the balls of dough.
  7. Shape the red dough into very thin sausages.
  8. Roll out the dough with a rolling pin on a floured work surface and, with the help of a round cookie cutter, cut circles of 5 cm in diameter and a smaller disc, 3 cm in diameter.
  9. Place the balls of filling on the smaller discs and cover with the larger discs, press with your fingers to seal the two discs, roll to give the shape of a hat, continue the operation until the dough and filling are used up, place them on a greased baking sheet.
  10. Decorate the hats with a special cookie cutter.
  11. Decorate the hats with the thin sausages and attach with silver dragees.
  12. Bake in a moderately hot oven for 10 to 15 minutes.
  13. Place them on a serving dish.
