🥘 Ingredients

  • 4 Andouillettes
  • 30cl bottle of Madeira sauce
  • 50cl white wine
  • 3 chopped onions
  • 1 carrot
  • thyme, laurel

👨‍🍳 Instructions

  1. Peel and cut the carrot into rounds.
  2. Place in a casserole dish the white wine and chopped onions, carrot rounds, a pinch of thyme, 1 laurel leaf, and let reduce by two thirds. Add the Madeira sauce from the bottle and cook for 15 minutes. Transfer this preparation to a strainer.
  3. Prick the Andouillettes with a fork to prevent them from exploding.
  4. Cook in a lightly buttered pan for 5 minutes, then add the prepared sauce and cook at low heat for 10 minutes.
  5. Place the Andouilles on a serving dish and cover with sauce.
