Welcome to our kitchen where we present a traditional specialty from the Maghreb: Pastillas Farcies. These delicious pastilla or brick leaves, filled with vegetables, mushrooms, cheese, and olives, are bursting with Arab-Muslim flavors that transport us to the heart of the Mediterranean. Here is an authentic recipe that combines culinary delights to create an unforgettable dish!

🥘 Ingredients

  • 500g of pastilla or brick leaves
  • 1 red bell pepper cut into pieces
  • 1 yellow bell pepper cut into pieces
  • 1 chopped onion
  • 1 can of mushrooms cut into pieces
  • 50g of black mushrooms
  • 150g of cubed red cheese
  • 1 tablespoon of butter
  • 2 tablespoons of sour cream
  • 50g of green olives cut into rounds
  • 1 egg yolk
  • Salt, pepper

👨‍🍳 Instructions

  1. Soak the black mushrooms in hot water, then cut them into pieces.
  2. Heat the butter in a pan and sauté the chopped onion and bell pepper pieces, then add the sliced mushrooms, black mushrooms, season with salt and pepper, cook while stirring with a wooden spoon, add sour cream and continue cooking for 5 minutes, off the heat add the olives, let the filling cool down then add the cheese cubes.
  3. Cut the pastilla leaves in half.
  4. Place each half-leaf lengthwise on the work surface, put a tablespoon of filling at one end, fold two opposite sides of the half-leaf to form a rectangle, roll into a cigar shape, attach the end with the egg yolk, repeat this process until the filling and leaves are used up.
  5. Bake at 180° C for about 20 minutes, until they are well golden.
  6. Serve hot.
