🥘 Ingredients
- 4 Andouillettes
- 30cl bottle of Madeira sauce
- 50cl white wine
- 3 chopped onions
- 1 carrot
- thyme, laurel
👨🍳 Instructions
- Peel and cut the carrot into rounds.
- Place in a casserole dish the white wine and chopped onions, carrot rounds, a pinch of thyme, 1 laurel leaf, and let reduce by two thirds. Add the Madeira sauce from the bottle and cook for 15 minutes. Transfer this preparation to a strainer.
- Prick the Andouillettes with a fork to prevent them from exploding.
- Cook in a lightly buttered pan for 5 minutes, then add the prepared sauce and cook at low heat for 10 minutes.
- Place the Andouilles on a serving dish and cover with sauce.
