- 4 eggplants
- 1 tablespoon of flour
- 1/2 cup of milk
- 1 egg
- Salt, pepper
- Oil for frying

- Prepare the coating mixture by putting in a container the flour, egg, milk, pepper, and salt. Mix well together.
- Begin by washing the eggplants and cutting them into rounds (without the skin). Place them in a container of salted water to soften for a few minutes, then dry them out by pressing between your hands until no water droplets remain.
- Coat each round of eggplant on both sides with the prepared mixture.
- Fry the eggplants in hot oil until they are golden on both sides. Make sure to remove and dry them with paper towels.
