Stuffed Avocado with Scallops

🥘 Ingredients
- 3 avocados
- 8 scallops (Saint Jacques)
- 2 shallots, minced
- 2 lemons
- 2 tablespoons of peanut oil
- A few grains of green peppercorns
- Salt, pepper, and chives
👨🍳 Instructions
- Prepare a marinade by mixing in a bowl the green peppercorns, minced shallots, peanut oil, and juice from ½ lemon to create an exquisite fragrance.
- Open the scallops, rinse and drain them, cut them into small pieces and add them to the marinade, let them marinate for about 1 hour to infuse with the flavor of the marinade.
- Cut the avocados in half, remove the pits and the flesh, reserve 4 shells and puree the rest of the flesh, season with salt and pepper, add the juice from ½ lemon, stir to get a smooth puree.
- Add the scallops to this puree, reserving 4 corals for decoration.
