🥘 Ingredients

  • 350 g apricots
  • 4 tablespoons orange juice
  • 1 tablespoon gelatin (in powder form)
  • 2 tablespoons pistachios
  • 3 deciliters thick cream
  • For the garnish
  • Whipped cream
  • Apricot slices
  • Few pistachios

👨‍🍳 Instructions

  1. Start by washing the apricots carefully, then pit them and finely chop them with a vegetable slicer. Mix them in a blender until you obtain a smooth and homogeneous cream.
  2. Put orange juice in a bowl, add gelatin powder to it and heat the mixture over a water bath until the gelatin completely dissolves. Pour this preparation into the apricot cream, let it cool before continuing.
  3. Whip thick cream well with a whisk until it becomes firm and homogeneous. Add it to the previous preparation to obtain a smooth and dense texture.
  4. Pour the obtained apricot cream into lightly greased molds with a little butter, then refrigerate until the cream sets (approximately 3 hours of cooling time).
  5. Serve the apricot cream surrounded by fresh apricot slices and whipped cream, along with a pistachio garnish for a refined and subtly aromatic dessert!
