Almond and Walnut Balls

🥘 Ingredients
- 250g almonds
- 250g walnuts
- 250g powdered sugar
- 1 packet baking powder (levure pâtissière)
- 2 eggs
- Granulated sugar for coating
👨🍳 Instructions
- Start by toasting the walnuts in a pan until they are golden brown.
- Follow with the almonds and toast them until they become golden brown as well.
- Grind the walnuts and almonds in a mill, then add the powdered sugar.
- Transfer this mixture of walnuts and almonds to a bowl. Add the baking powder followed by the eggs, and mix well together.
- Form small balls, about the size of a cherry, using the previous mixture.
- Roll these balls in granulated sugar and place them in paper pastry cases, then arrange them on an oiled baking sheet.
- Bake the cakes in a moderately hot oven, first cooking the bottom of the balls by placing the baking sheet directly onto the oven floor until the balls puff up. Then, cook the balls to give them a round shape.
- Store them in an airtight container.
