🥘 Ingredients

  • 500g of pastilla leaves or puff pastry sheets
  • 1 egg
  • 1 liter of oil for frying
  • For the filling
  • 500g of potatoes
  • 8 triangles of cheese
  • Salt, pepper

👨‍🍳 Instructions

  1. Begin by washing, peeling and cutting the potatoes into pieces.
  2. Place these pieces in a cold pot of water, then bring the water to boil to cook the potatoes for 20 minutes.
  3. Once cooked, pass these pieces through a food mill to obtain a smooth and homogeneous puree.
  4. Mix the cheese well with the potato puree, add salt and pepper to taste.
  5. Cut the pastilla leaves into rectangles shaped 10 cm by 30 cm using a knife.
  6. Place a rectangle of pastilla leaf on the work surface, place a spoonful of filling at the end of the rectangle. Fold and fold the rectangle to form a triangle and seal the tip with beaten egg, making sure to enclose the triangle properly. Repeat this process until the filling or pastilla leaves are exhausted.
  7. Fry these triangles in a large amount of oil for frying until they are golden brown.
  8. Serve the Briouats with Potatoes immediately, hot and crispy so you can enjoy their maximum flavor.
