🥘 Ingredients

  • 600g of Pastilla leaf sheets
  • 500g of almonds
  • 1 can of sweet condensed milk

👨‍🍳 Instructions

  1. Peel the almonds, dry them well and fry them in hot oil until they are golden. Let them cool completely.
  2. Finely chop the fried almonds using a meat grinder or a food processor until they are very smooth and homogeneous.
  3. Put boiling water in a large saucepan and pour in the sweet condensed milk, then let it cook for about 45 minutes until the cream is caramelized.
  4. Put the ground almonds in a large ceramic or glass bowl and add the caramelized cream gradually to form a homogeneous paste, making sure to mix well.
  5. Take balls of paste similar in size to a cherry between your hands and place them on a baking sheet.
  6. Cut the Pastilla leaf sheets into rectangles with a pair of scissors. Take one rectangle and place it on your work surface, put a ball of filling at the end of this rectangle, fold the rectangle in half to form a half, then fold the half again towards the inside to form a triangle. Seal the triangle tip with a mixture of flour and water using a brush or a spoon, making sure to enclose the triangle.
  7. Repeat this process until the filling and Pastilla leaf sheets are exhausted.
  8. Fry the triangles in a large saucepan filled with hot oil, making sure not to overcook them. Remove them from the oil with a strainer or a spoon and immediately dip them in hot honey. Let them soak for a few seconds, then remove them and drain them in a strainer.
  9. Serve the briouats cold.
