🥘 Ingredients

  • 500g almonds
  • 300g powdered sugar
  • 1 tablespoon of fondant
  • 1 tablespoon of syrup
  • 2 tablespoons of cocoa powder
  • Garnish
  • Chocolate vermicelli
  • Some melted dark chocolate
  • Silver dragees for decoration

👨‍🍳 Instructions

  1. Peel the almonds, drain them, and wash them with clean cloth before spreading them on a towel to dry overnight. Then, combine the almonds with powdered sugar.
  2. Grind the almonds and powdered sugar together in an electric grinder until the paste is smooth. Remove a ball of this paste later to create almond flower shapes using a pastry bag.
  3. In a bowl, mix the almond paste, fondant, syrup, sifted cocoa powder, and knead the paste until it’s uniform.
  4. Shape small balls from this dough, similar in size to a cherry, wrap them with chocolate vermicelli, place them in paper tartlet cases. Decorate the balls with almond flowers made from melted dark chocolate and silver dragees.
  5. Finally, arrange them on a platter.
