Sablé and Almond Balls

🥘 Ingredients
- 250g almonds
- 160g powdered sugar (sucré glacé)
- 190g crushed sablé biscuits
- 1 can of sweetened condensed milk (lait condensé sucré)
- 2 tablespoons cornstarch (fondant)
- 1 teaspoon butter
- Grilled sliced almonds for garnish
- Dark chocolate
👨🍳 Instructions
- Cook the sweetened condensed milk in a saucepan over boiling water for 45 minutes to create a caramelized cream.
- Peel and drain the almonds, place them in a clean cloth to dry overnight. Afterward, combine the almonds with the powdered sugar. Grind the mixture in an electric grinder until smooth.
- In a bowl, combine the crushed sablé biscuits and the caramelized condensed milk to create a homogeneous dough.
- Mix in a dish the almond-sugar paste, cornstarch, and butter until a smooth paste is formed.
- Melt dark chocolate in a double boiler.
- Shape balls with the sablé pastry dough, make a hole in each ball, and fill them with smaller almond paste balls. Seal the balls and place them into muffin cups as you go along, covering them with melted dark chocolate, and decorating with grilled sliced almonds.
