Savory Brioche
In the streets of Lyon, where gastronomy reigned supreme, I discovered this savory brioche that left me speechless. This French bread made from flour, yeast, and cream cheese is a delight for taste buds. It is perfect for a savory brunch or to accompany your favorite dishes, whether it’s a sandwich or a family gathering around a warm meal.
🥘 Ingredients
- 420g of flour
- 2 tablespoons of baker’s yeast
- 1 tablespoon of cream
- 1 teaspoon of salt
- 30g of melted butter
- 30g of white cheese (cream cheese)
- 2 eggs
- 1/2 teaspoon of pepper
- 25cl of milk
- Garnish
- 1 egg yolk
👨🍳 Instructions
- Dissolve the yeast in warm milk for 15 minutes.
- In a large bowl, make a well in the center, add salt, eggs, melted butter, dissolved yeast with milk, cream, white cheese, pepper and mix until you get a soft and pliable dough.
- Place the dough in a container, cover it with a clean cloth and place it near a heat source for two hours to allow it to double in volume.
- Form small balls of dough from the dough and arrange them in a buttered and floured mold, cover them again and let them rise again until the dough swells and reaches the edge of the mold. Brush the dough with an egg yolk pastry brush.
- Bake the brioche in a hot oven.
