In the kitchens of Tunisia, desserts are often a reward for the senses, and the Chebakia is a delicious exception. This traditional sweet, made of crisp dough and honey, is a true delight for taste buds. 🥘 Ingredients

  • 1 kg of flour
  • 2 egg yolks
  • 1/2 cup of vinegar (teaspoon measurement)
  • 250g of melted butter
  • 1/2 kg of roasted and mixed sesame seeds
  • Some powdered gum arabic
  • Some saffron
  • Some pure saffron
  • 1 cup of orange blossom water
  • 2L of oil for frying
  • 2 kg of honey
  • 15g of dry yeast

👨‍🍳 Instructions

  1. In a container, combine the egg yolks, melted butter, saffron, saffron dissolved in warm water, orange blossom water, powdered gum arabic, yeast dissolved in warm water, mix well until a homogeneous mixture is obtained.
  2. In a bowl, combine sifted flour and roasted and mixed sesame seeds, mix well, create a well in the center, and add the mixture, knead well for 20 minutes with the palms of the hands, until a homogeneous and pliable dough is obtained.
  3. Form balls from the dough, the size of an orange, cover them with a cloth.
  4. Roll out the dough with a rolling pin to a thickness of 2 to 3mm, cut it into rectangles with a dimension of 8 x 10cm using a fluted pastry wheel, then cut four parallel slits in these rectangles, being careful not to cut the edges.
  5. Lift with fingers the three odd-numbered strips towards the top and leave the two others at the bottom, try to join the two opposite corners to form a flower, continue the operation until the dough is finished.
  6. Place the chebbakia on a tray and cover them with a clean cloth, let them rest for 15 minutes.
  7. Heat the honey in a saucepan over a water bath, add two tablespoons of orange blossom water.
  8. Heat the oil in a pan and golden fry the chebbakia on both sides, remove and immerse immediately in hot honey, decorate with roasted sesame seeds.
  9. Arrange them in a pretty dish.
