🥘 Ingredients

  • 3 medium potatoes
  • 200g ground coconut
  • 150g granulated sugar
  • 2 tablespoons cornstarch
  • 1 packet vanilla sugar

👨‍🍳 Instructions

  1. Cook the potatoes in a pot of water, boil and let cook for 20 minutes.
  2. At the end of the cooking time for the potatoes, remove their peel and pass through a food mill.
  3. Place the potato puree in a large shallow dish along with the granulated sugar, ground coconut, cornstarch, vanilla sugar, and work until a homogeneous and pliable dough is obtained.
  4. Fill a special mold for this cake in the cookie machine.
  5. Take a piece of dough and put it in the cookie machine, gently turn the handle to get rectangles 6cm long and 2.5cm wide, place them as needed on a baking sheet lined with parchment paper.
  6. Bake at moderate heat until they are golden.
  7. Store in a closed container.
