Cream Biscuits and Kiwis
In the island of Ré, a land rich in culinary tradition, here is a recipe we are proud to share with you: Cream Biscuits and Kiwis that will make your taste buds dance! These delicious little morsels are the perfect reflection of Mediterranean sweetness, where the tenderness of the dough meets the fresh flavors of kiwis.
🥘 Ingredients
- Dough
- 150g butter
- 100g powdered sugar
- 1 egg yolk
- 1/2 packet of baking powder
- 50g cornstarch
- A pinch of salt
- Flour according to the mix
- Chocolate syrup
- White chocolate for decoration
- 3 kiwis
- Cream
- 1/4 liter milk
- 40g powdered sugar
- 1 egg yolk
- 15g cornstarch
- 1 packet of vanilla sugar
👨🍳 Instructions
- Bring the milk and vanilla sugar to a boil in a saucepan.
- In another saucepan, mix together the sugar, egg yolk, cornstarch, then gradually add the hot milk while stirring with a wooden spoon. Cook over low heat without stopping to stir until the cream thickens.
- Cover the cream with plastic wrap and refrigerate.
- Work the butter and powdered sugar in a bowl until they form a creamy mixture, then add the egg yolk, mix well, add the cornstarch, a pinch of salt, baking powder, gradually add sifted flour, and knead until the dough is completely homogeneous and soft.
- Roll out the dough on a work surface with a rolling pin to a thickness of 3mm, decorate the rolled-out dough with another cannelé roller, cut disks using a round pastry cutter of 5cm in diameter, place them on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 180°C until they are golden brown.
- Peel the kiwis and cut into rounds.
- Spread the cream on each biscuit, place kiwi rounds on top, followed by white chocolate rounds, and drizzle with chocolate syrup.
- Arrange them on a plate.
