In the streets of Provence, Provençal cuisine is synonymous with delicious and savory! And here, I present to you a legendary recipe that evokes the flavors of this sunny terrain: a puff pastry roll that unites the exotic flavors of the region, with tomatoes, pineapples, onions, and bell peppers, wrapped in shredded mozzarella. 🥘 Ingredients

  • Puff pastry
  • 1 can of pineapples
  • 1 onion
  • 5 peeled and grated tomatoes
  • 1 tablespoon of tomato concentrate
  • 1 green bell pepper
  • 100g of shredded mozzarella
  • 2 tablespoons of oil
  • 50g of black olives
  • Salt, pepper

👨‍🍳 Instructions

  1. Peel the onion, cut it into thin rounds, and separate the rings with fingers.
  2. Wash and seed the bell pepper, cut it into rounds.
  3. Heat 2 tablespoons of oil in a pan, add the grated tomatoes, tomato concentrate, salt, pepper, and cook at low heat until a thick sauce is obtained.
  4. Roll out the puff pastry to a thickness of 3mm, cut this into squares using a pastry cutter, place them on a greased tray. Cover them with tomato sauce, place the onion rings and bell pepper rounds on top, and decorate with pineapple ring halves and black olives, sprinkle with shredded mozzarella.
  5. Bake in a preheated oven at 200°C until the pastry is golden.
  6. Serve immediately.
