  • 500g of eggplants
  • 2 garlic cloves
  • The juice of 2 or 3 lemons
  • 1 tablespoon of sesame cream (tahini)
  • Mint leaves
  • Oil

👨‍🍳 Instructions

  1. Begin by roasting the eggplants at 210° C for 30 minutes, until they are well softened.
  2. Once the eggplants are cooked, let them cool before peeling and cutting them into large chunks.
  3. Peel and mince the garlic cloves, then combine the lemon juice, sesame cream, and finely chopped mint with the eggplant puree.
  4. Mix the ingredients together to obtain a smooth and creamy texture.
  5. In a hollow bowl, place the puree and decorate it with mint leaves and a drizzle of oil.
  6. Chill before serving.
