The rolled brioche with dried grapes is a delicious dessert that is both sweet and soft, perfect for serving with tea.

🥘 Ingredients

  • 400g flour
  • 1.3 dl milk
  • 3 egg yolks
  • 90g melted butter
  • 60g powdered sugar
  • 1 ½ teaspoon active dry yeast
  • 1 teaspoon salt
  • 60g dried grapes

👨‍🍳 Instructions

  1. Dissolve the yeast in warm milk and let it sit for 15 minutes.
  2. Sift the flour into a large bowl, create a well in the center, add the milk-yeast mixture, sugar, salt, and mix vigorously with your hand. Then add the melted butter and egg yolks, knead energetically with the palm of your hand until you obtain a soft and non-sticky dough, form a ball with the dough, cover it with a clean cloth, let it rest for 15 minutes.
  3. Soak the dried grapes in warm water to plump them up, then dry them with a cloth.
  4. Roll out the dough on a floured work surface into a rectangular shape using a rolling pin, place the plumped dried grapes on top, roll the dough over itself, place it on an oiled baking sheet, let it rest for 1 hour.
  5. Brush the surface of the brioche with egg yolk, make parallel lines with a knife.
  6. Bake in a preheated oven at 200°C for 30 minutes or until it is well-browned.
  7. Serve warm accompanied by tea.
