🥘 Ingredients

  • 1kg flour
  • 2 egg yolks
  • 7.5cl vinegar
  • 250g melted butter
  • 125g toasted and ground sesame seeds (mixed 3 times)
  • 125g almond powder
  • 1 tablespoon of rinsed butter
  • Some powdered gum arabic
  • Some saffron
  • Some pure saffron
  • 15cl orange blossom water
  • 15g baking yeast
  • 2L frying oil
  • 2kg honey
  • A small bowl of toasted sesame seeds for decoration

👨‍🍳 Instructions

  1. In a container, pour the egg yolks, melted butter, saffron, saffron dissolved in warm water, orange blossom water, powdered gum arabic, rinsed butter, and dissolved yeast in warm water. Mix the ingredients well until a homogeneous mixture is obtained.
  2. In a large bowl, add sifted flour, almond powder, and ground toasted sesame seeds. Incorporate them well and make a well. Add the previous mixture and knead the dough for 20 minutes with the palms of your hands, until a homogeneous and pliable dough is obtained.
  3. Form balls of orange size with the dough and cover them with a cloth.
  4. Roll out the dough with a rolling pin to obtain a thickness of 2 to 3mm. Cut it into rectangles of 6cm x 8cm using a fluted rolling pin, then cut four parallel slits in each rectangle, avoiding the edges.
  5. Lift with your fingers the three odd-numbered strips upward and leave the two others down. Try to join the two opposite corners to form a flower. Continue the operation until the dough is used up.
  6. Place the chebakia on a tray and cover them with a clean cloth. Let rest for 15 minutes.
  7. Heat the honey in a saucepan over a water bath, add two tablespoons of orange blossom water.
  8. Fry the chebakia in a pan filled with hot oil until they are golden on both sides. Remove the chebakia and immerse them immediately in hot honey. Decorate them with toasted sesame seeds.
  9. Store the chebakia in a well-sealed box.
