Meringue Biscuits, these little treats with creamy hearts and an almond flavor, have captured the hearts of all food lovers! Originating from Eastern Europe, particularly Poland where they are deliciously called ‘Makowiec’, these biscuits make for an ideal dessert or tea-time snack to celebrate and share with family.

πŸ₯˜ Ingredients

  • 500g butter
  • 250g powdered sugar
  • 8 egg yolks
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • flour as needed for mixture
  • Filling
  • 125g powdered sugar
  • 2 egg whites
  • Almonds

πŸ‘¨β€πŸ³ Instructions

  1. Start by working energetically the powdered sugar and butter together until they become creamy. Add in the egg yolks, mix well, then add vanilla extract and almond extract. Incorporate sifted flour gradually, mix well, and knead until the dough is smooth and firm.
  2. Cut the dough into several small pieces.
  3. Beat egg whites to very stiff peaks, add powdered sugar gradually, continue beating for 8 minutes until a very creamy mixture is obtained.
  4. Roll out the dough to a thickness of 3 mm using a rolling pin, cut it with a cookie cutter and place them on a baking sheet lined with parchment paper. Spread the filling (meringue) over the cookies and decorate with almonds.
  5. Store the meringue biscuits in an airtight container.
