Here is the secret of the biscuits with fresh jam from our beautiful region of Normandy! These crispy little jewels are an institution in our homes, where they bring a bit of sweetness and warmth to every shared moment around lunch or snack time. The jam or chocolate adds an unexpected touch of indulgence, delighting both children and adults!

🥘 Ingredients

  • 500g butter
  • 250g powdered sugar
  • 2 small glasses of oil
  • 3 eggs
  • 2 packets of baking powder
  • 1kg flour (plus or minus according to the need for mixture)
  • 1 small pot of apricot jam
  • 100g dark chocolate
  • 100g white chocolate

👨‍🍳 Instructions

  1. Begin by mixing butter and sugar until they are smooth and creamy.
  2. Add eggs one at a time, then oil, baking powder and incorporate sifted flour. Continue to mix and knead the dough until it is completely homogeneous.
  3. Cut the dough into several small pieces.
  4. Roll out the dough on an approximately 3mm thickness using a rolling pin for pastries, then use a round cookie cutter to cut circles of dough. Use another embroidery hoop-shaped cutter to poke a hole in the centers of the circles, and place these biscuits on a buttered baking sheet, continuing until all the dough is used up.
  5. Bake the biscuits in a preheated oven for 15 minutes at medium temperature.
  6. Melt the jam or chocolate over a double boiler, then pour it over the un-holed biscuits and cover them with the holed biscuits until all the biscuits are used up.
  7. Once filled, place these Jam or Chocolate Biscuits in a well-sealed box to avoid them from becoming soft before consumption.
