Bidding farewell to Europe, hello Southeast Asia! I am delighted to share with you a recipe that stirs memories of my childhood in the Indonesian archipelago: shrimp and fish skewers. A marvelous blend of sweet, salty, and tangy flavors, unfolding on land by the sea, with fresh and potent ingredients directly from Indonesia.

🥘 Ingredients

  • 16 shrimps
  • 300g yellow fish (saltwater)
  • 2 onions
  • 2 tomatoes
  • 3 sprigs of cilantro
  • For the marinade
  • 1/2 bottle of cilantro
  • 1 tablespoon grated ginger
  • 1 chili pepper
  • 3 tablespoons peanut oil
  • 1 tablespoon sesame oil
  • Salt, pepper

👨‍🍳 Instructions

  1. Préparez la marinade en mélangeant tous les ingrédients de la marinade : huile d’arachide, gingembre frais, sucre, vinaigre et sel.
  2. Passez les crevettes et le poisson découpé en morceaux dans cette préparation pour les badigeonner.
  3. Placez-les à mariner dans un récipient hermétiquement fermé pendant 6h.
  4. Coupez les oignons en tranches et les tomates en quartiers.
  5. Retirez ensuite les crevettes et les morceaux de poisson du marinade et les mettez de côté.
  6. Enfilez sur des pics à brochettes, en alternant, un morceau de poisson, un tranche d’oignon, une quartière de tomate et pareillement avec les crevettes jusqu’à épuisement des éléments.
  7. Faites chauffer un peu d’huile dans une poêle et ajoutez-y les brochettes. Cuisez-les pendant 2 minutes sur chaque côté pour que le poisson soit bien cuit.
  8. Servez les brochettes de crevettes et de poisson garnies de coriandre hachée, fraîchement cueillie. Bon appétit !
