Here is a recipe that will take you to the fragrant gardens of the region, with its tender and crispy eggplants, filled with a savory delicious stuffing.

🥘 Ingredients

  • 4 eggplants
  • 1 tablespoon of flour
  • 1/2 cup of milk
  • 1 egg
  • Salt, pepper
  • Oil for frying

👨‍🍳 Instructions

  1. Prepare the coating mixture by putting in a container the flour, egg, milk, pepper, and salt. Mix well together.
  2. Begin by washing the eggplants and cutting them into rounds (without the skin). Place them in a container of salted water to soften for a few minutes, then dry them out by pressing between your hands until no water droplets remain.
  3. Coat each round of eggplant on both sides with the prepared mixture.
  4. Fry the eggplants in hot oil until they are golden on both sides. Make sure to remove and dry them with paper towels.
  5. Serve these stuffed eggplants warm for a good appetite.
